I am pretty sure the freeze plug is only needed if you are not going to run a thermostat. Without the thermostat in there the water pump will short cycle and not move any fluid. It also helps to heat the pump a little before you try to remove the nipples. They are pressed in and can be a PITA to get out. Speedway is a great place to get the allen head pipe plugs like shown above but the 3/8" and 1/2" npt taps are not cheap.
