I'm running a truck intake with the stock pan. The engine is set in with the pan above the skid which is completely flat front to back. Obviously, seat position will play a big part in visibility but, at least in my case, everything would need to be quite a bit lower to gain any significant amount of visibility. Though, I'm also the type to look out the side rather than straight ahead. Keeping your engine cage tight will reduce visual obstructions as well.
