I love italian food... love love love it. But there is NO WERE close to Dora Alabama .


Shoot me some good stuff, wife loves all things alfredo... Hb loves chicken , shoot we all do.

Im thinking full meal what should I put together kinda stuff. Im no cook by any means so alot of help would be required. Im talking we do lasagne from a box and just put alot more cheese on top. laughing1
 
italian...i can handle that...

first off, alfredo sauce should be cooked to order...it's VERY easy...never buy that **** in a jar......

i love a chicken parm over alfredo pasta, how about that....

for the chicken...

take 2-3 raw boneless skinless and cut them in half like you we going to butterfly them....THIN is the key....

mix up 1 cup of italian bread crumbs with 2 cups of grated parmesan cheese, and a pinch of salt and pepper...

dust the chicken in flour, shaking off excess flour...
then dip the floured chicken in an eggwash (2 eggs fork beaten with about 1/3 c of water)
then, dip that battered chicken liberally in the bread/cheese mix....

heat a teflon griddle or flat bottomed skillet to med-high heat and add a little vegetable oil to it once it is hot....add the chicken a piece or two at a time, but not to much so that it cools off the skillet to much.....saute the chicken until it gets golden brown on both sides...should be about 2 in each side....remove it from the skillet and put it on a non stick cookie tray....

top each chicken piece with a tablespoon or so of your favorite marinara sauce from a jar (easier than me telling you to make some marinara for ONE dish)........i like the prego garden with peppers and onions....its pretty good...once you have the marinara sauce on it, top each piece of chicken with some shredded mozzarella and a little more grated parmesan....

cook off some fettuccine noodles....and hold them...oil them a little if they are going to sit for a while....

put the chicken in a 350* preheated oven for about 6-10 minutes until the chicken is FULLY done and the cheese is melted......while you are cooking the chicken, you should have the below pasta going already, you do want everything hot and fresh, right.....

now, heat a skillet and pour in some heavy whipping cream.....season it with a little salt and pepper, pinch of ground nutmeg, and a teaspoon of minced garlic.....turn the heat to high until the cream looks to be boiling over....reduce and simmer until bubbling gets slower and the cream gets a yellowish tint to it....add your pasta to that and a little more cream if you need to.....also, as the noodles heat up sprinkle a little more parmesan into the cream and pasta, and toss around....sauce should thicken really nicely and coat the pasta.....taste and asjust seasoning to your liking...the nutmeg really makes this pasta......but DON'T over do it....it will be nastoooo....

when pasta is ready, place some on a serving plate and put a piece or two of the chicken ontop and vuala..


this is really simple...

also, you can do it with pork & veal if you want....

the pasta can have grilled chicken, shrimp, crab, and/or veggies added to it for a meal on it's own....

Yeah printing this off so I can make it some night soon. Haven't had pasta in a long time

thankx guys...hey matty owe....this is very simple...jenn should be able to get r dun....it really is good....and for the record, the more parm in the bread crumb mix for the chicken, the better....but that's just my taste....9and that recipe is just off the top of my head, as if i was gonna do it at home....

here's another one....lite enuff for a woman...but tasty enuff for a man....

angel hair with shrimp, veggies, and basil pesto...

what you will need....

shrimp...whatever size, you want, in what ever quantity you want....
thinly sliced red bell peppers, yellow squash, and zucchini
minced shallot (1-2 teaspoons)
minced garlic (1-2 teaspoons)
cooked angel hair pasta (cappellini)
basil pesto (can be sourced from a jar, usually pretty good, too much trouble just to make at home for this one dish)
white wine
butter, optional....
canola/veg oil

start by heating up a skillet and addind a little oil to it...when hot, throw in your shrimp and saute for a few minuteson each side....when shrimp appear to be about 1/2 way done, add in garlic/shallots and veggies and continue to cook...be careful though, garlic will scorch easy and be very bitter...and nasty...

when the mix appears to be getting very hot and cooking well, deglaze the skillet with some white wine, ....put your thumb over the bottle and shake it in there a few times...should be about 2-3 tablespoons of liquid, then season with salt and pepper....as soon as you deglaze, add in ~2 tablespoons of basil pesto and swirl it around...add a pat or two of butter to it and then toss in your pasta (run some really hot sink water over the pasta to get it started heating up....toss it all together and make sure the seasoning is up to your par.....

serve hot....you can sub in or add: grilled chicken, scallops, crabmeat, or more/different veggies if your tasted aren't suited....

also, you can modify the pasta even MORE by adding a little heavy cream and a little jarred marinara sauce before you put in the pasta and you will have a nice prima rosa sauce....tomato cream is really good.....
