6.0 will get about 14 mpg normal driving not towing. 9 or less towing.

8.1 will get about 11 normal. 9 or less towing. But has way more torque.



I don't have experience with the 8.1 in a burb with the 4L80 trans though, only in 3500 trucks with a 5 spd Allison.
 
I had a 2005 Suburban with the 5.3. Finally traded it in with around 200,000 miles, leaking head gasket and rear main seal. Other than that no major issues with engine or tranny.

Pro's
Seats 8 for everyday use
Remove 3rd row, fold 2nd row down and sleep comfortably in the back on full air mattress when wheeling.
Rides like a Cadillac
Good turning radius
14 mpg around town(this should probably be in con's)

Con's
Speedometer clusters go bad around 100,000 miles (original and 2nd cluster from junk yard)
9-10 mpg hauling jeep
 
Clusters are getting cheaper though, Dorman is making them and will burn mileage and vin in for about $200 then it is just plug and play, they are also making custom clusters, white faced gauges ect for the same price.

If u can find one just get the 8.1, comes with a 4l85 beefier than the 4l80
it pulls a hell of a lot better than any 6.0 I've driven

I've had the 6.0 and I have a 8.1 now I like the 8.1 better it gets better mpg then the 6.0 plus way more towing power I think because of the weight of the suburban the big block is much more suitable , plus a queen matress fits in the back so no more tent camping
